Dying to sample something Sean himself might have baked?
Here ya go...1 c sugar
3 lg eggs
1 tsp vanilla extract
1 tsp anise or almond extract (J. prefers anise!)
1/4 c vegetable oil
2 c all-purpose flour (You should all be using King Arthur's!)
1/8 tsp salt
2 tsp baking powder
1 c toasted almonds, cooled and coarsely choppedPreheat oven to 350° and grease and flour a large cookie sheet.
In large mixing bowl, whisk together sugar, eggs, flavorings, and oil.
Sift together flour, salt, and baking powder, and add to wet ingredients.
Add almonds.
Divide dough into 2 parts. On floured surface, roll each piece into a 12" log.
Transfer logs to prepared cookie sheet and bake 20-25 minutes, until they are lightly browned and firm to touch.
Remove from oven and cool slightly, then transfer logs to cutting board. Cut each into 1" slices.
Lay slices flat one cookie sheet and bake for 10 more minutes.
The dough is tricky to handle, quite sticky and malleable. Go ahead and be pretty generous about flouring your work surface, and work quickly shaping and transferring the dough.
Again, here's another recipe that's a bit of a pain, but well worth it.
Have plenty of good coffee on hand to serve with these.
