Phelan's Ultimate Decadence Truly awesome cookies -- Chocolate, studded with macadamia nuts and white chocolate chips. To die for!
Phelan's Ultimate Decadence
8 oz semi-sweet choclate chips (Ghirardelli, if you can get it)
8 oz white chocolate chips (also Ghirardelli)
3/4 cup firmly packed brown sugar (I use light brown, but you could probably use dark, too)
1/4 cup butter or margarine
2 eggs
1 tsp vanilla
1/2 cup flour
1/4 tsp baking powder
2 cups chopped nuts (I use mostly Macadamia nuts, with the final 1/3 cup rounded out with chopped walnuts, being as I am Too Cheap to buy two jars of Macadamia nuts...)Heat oven to 350°F.
Melt semi-sweet chocolate chips in microwave or double boiler, stirring till melted and smooth.
Place melted chocolate in mixing bowl and add sugar, butter, eggs, and vanilla.
Stir in flour and baking powder.
Stir in white chocolate chips and chopped nuts.
Drop by teaspoonsful onto ungreased cookie sheets.
Bake 8-10 minutes, or until cookies are puffed and feel set to the touch. Cool on cookie sheet one minute, then transfer to wire rack to cool completely.
Makes about 50 cookies.
Chef's note:
I found these to be really gushy and fragile. If you drop one upside-down while transferring it to the rack, it will break, and you will have no choice but to eat it. Be careful the melted chocolate doesn't burn you, and try not to have too many "accidents"...These are splendid with hot coffee!
